Mock Sauerkraut Salad

My mom used to make a sauerkraut salad that was a favorite dish of mine. The flavors in this dish remind me of it. Take cabbage cooked with lemon (mock sauerkraut) and chill. Add lots of freshly ground pepper and salt to taste. Add sweetener of your choice and mix thoroughly.

For phase 3, this salad is excellent with strips of green pepper and/or red pepper and onion.

Lemon Pepper Cabbage (Mock Sauerkraut)

Squeeze 1/2 of lemon into bottom of pan. Slice head of cabbage with chef's knife into thin slices, then chop. Put cabbage into pan and squeeze remaining lemon half over the top. Add 3/4 to 1 cup of water depending on the size of the cabbage head. Cook on medium high in 10 inch skillet until bottom begins to brown. Deglaze the pan with 1/2 cup water. Serve with plenty of freshly ground pepper and salt to taste.

I was surprised when the first bite tasted like sauerkraut to me!

Strawberry Smoothie

8-10 small to medium strawberries
1 cup ice

Start on low and work up to high speed in the VitaMix.
I planned to stir in sweetener at the end, but it was perfect as it was!

2 Peter 1

Don't Put It Off
 3-4Everything that goes into a life of pleasing God has been miraculously given to us by getting to know, personally and intimately, the One who invited us to God. The best invitation we ever received! We were also given absolutely terrific promises to pass on to you—your tickets to participation in the life of God after you turned your back on a world corrupted by lust.  5-9So don't lose a minute in building on what you've been given, complementing your basic faith with good character, spiritual understanding, alert discipline, passionate patience, reverent wonder, warm friendliness, and generous love, each dimension fitting into and developing the others. With these qualities active and growing in your lives, no grass will grow under your feet, no day will pass without its reward as you mature in your experience of our Master Jesus. Without these qualities you can't see what's right before you, oblivious that your old sinful life has been wiped off the books.
 10-11So, friends, confirm God's invitation to you, his choice of you. Don't put it off; do it now. Do this, and you'll have your life on a firm footing, the streets paved and the way wide open into the eternal kingdom of our Master and Savior, Jesus Christ.
The One Light in a Dark Time
 12-15Because the stakes are so high, even though you're up-to-date on all this truth and practice it inside and out, I'm not going to let up for a minute in calling you to attention before it. This is the post to which I've been assigned—keeping you alert with frequent reminders—and I'm sticking to it as long as I live. I know that I'm to die soon; the Master has made that quite clear to me. And so I am especially eager that you have all this down in black and white so that after I die, you'll have it for ready reference.  16-18We weren't, you know, just wishing on a star when we laid the facts out before you regarding the powerful return of our Master, Jesus Christ. We were there for the preview! We saw it with our own eyes: Jesus resplendent with light from God the Father as the voice of Majestic Glory spoke: "This is my Son, marked by my love, focus of all my delight." We were there on the holy mountain with him. We heard the voice out of heaven with our very own ears.
 19-21We couldn't be more sure of what we saw and heard—God's glory, God's voice. The prophetic Word was confirmed to us. You'll do well to keep focusing on it. It's the one light you have in a dark time as you wait for daybreak and the rising of the Morning Star in your hearts. The main thing to keep in mind here is that no prophecy of Scripture is a matter of private opinion. And why? Because it's not something concocted in the human heart. Prophecy resulted when the Holy Spirit prompted men and women to speak God's Word.

New Direction

I don't think anyone has ever viewed my blog and they might never do so. On November 1st, I will be transitioning to the next hcg phase. I'm not sure where all that will take me in blogging land.

Last night I found a lot more online recipes, so my need to invent my own is becoming less. ( I coudn't afford the cookbooks that are out there for purchase).

So, in the meantime, until I need to blog more about diet stuff on this blog, i'm taking it in a different direction since noone is reading anyway. I'll just use this for me and if somebody happens to stumble along, I hope they let me know :)

Chicken Meatball Soup

This is my very favorite of all the dishes I have created thus far. I had Sprouts grind chicken breasts that I could see were free of fat. They did this gladly for free.

100 grams of ground chicken breast
seasonings of your choice, my favorite was sage
onion if desired or onion juice (as much as you like)
garlic or garlic juice
water

Mix chicken with onion and seasonings. Shape into desired size of meatballs. I made it into 3 meatballs. Add 1 1/2 cups water and cook until done, about 5 minutes.

"French" Onion Soup

Tonight I made French Onion soup for the first time. It turned out great! I was kind of surprised :). Here is how I did it:

5 yellow onions, sliced into rounds
1 cup water (for cooking)
3-5 cups water depending on the flavor you like

Place onion slices into soup pot or large sauce pan. Add 3/4 c. - 1 c. of water. Cook on medium high to almost high until onions are soft, stirring frequently. Once most of the water is gone, you are wanting the onions to begin to carmelize on the bottom of the pan. Stir nearly constantly at this point. Once you are getting quite a few brown bits, deglaze the pan by adding another cup of water and stirring to release the browned part from the bottom. Once this is done, add desired amount of water for the flavor you desire. I liked this soup without any seasoning, with a slightly sweet flavor.
